What is Shochu?

Shochu (pronounced “sho-chew“) is an incredible Japanese distilled spirit that originated over 500 years ago.

What makes shochu unique?

1. Shochu can be distilled from many different local ingredients, the most popular being sweet potato, barley, rice, and kokuto sugar.

2. Because it uses koji, shochu has umami.

3. Genuine shochu is single-distilled, preserving the flavors and aromas of the ingredients. Most spirits are distilled many times, losing flavor with each pass.

Finally, you should know that single-distilled shochu is sugar-free, carb-free, naturally gluten-free, and additive-free.

What is Shochu Definition

Why Nankai?

The simple and easy answer is that our award-winning products are phenomenally smooth and delicious.

Our craft spirits are single-distilled and vacuum-distilled from only 4 simple ingredients: rice, water, koji, and artisanal kokuto sugar. Nothing artificial is ever added.

No sugar, carbs or gluten. Our low-ABV Nankai Shochu and White Oak have less than 40 cal/oz (30% less than vodka or tequila). It’s great with food. Naturally blessed with umami and salinity so it’s great in cocktails. We can go on if you want.

From Amami, Japan

NANKAI, which translates to the”South Sea,” is an homage to Amami, an island paradise off the southwestern coast of Japan.

Amami is where our exquisite kokuto, or “black sugar,” shochu has been handcrafted from premium sugarcane and rice using classic and modern techniques for over 60 years.

Our Mission

Much attention is rightfully given to Japan’s whiskey industry, but shochu is the national spirit.

Despite shochu’s health benefits, versatility, and complexity, it is still virtually unknown to most in the U.S. We’re here to change that.

Our mission is to introduce the beauty of shochu to a new audience through approachable and memorable product selections.

We hope you join us on this journey.
